Below is our text from the original recipe - this batch is all that, minus the peppers, PLUS the last of the fall season (which goes until March in Italy) Black Truffles. 

Yeah, this is for serious gourmets and big-ballers, Rolie wearers, Porsche drivers, wannabe playas, foodies, and TACC/Falcon brothers.

My buddy Alessio runs an Italian restaurant in NYC, and his kid brother back home in the motherland sent Alessio a few kilos of hand foraged truffles. Alessio, knows I'm slightly food crazy, and sold me a few grams to be included in my recipes.

An experimental batch was run a week ago, this tuned batch is something I am proud to share with you.

There were two processes I used on the truffles to impart their flavor into the biltong. 

  1. I dried some of the truffles in a dehydrator, then powdered in a blender, and included right into the spice rub giving all the biltong an even coating and flavor.
  2. I wanted to mince some of the truffle and get it to stick in "chunkier" visible pieces on the biltong, but I wanted to maintain the paleo/keto lack of sweeteners which meant a sugar/syrup sticky coating was out. SO... I spent the time to reduce the aged balsamic already used as a dredge into a sticky sludge, into which the truffle was then incorporated and brushed onto each piece individually.

This is a once a year batch, get it before its gone!

 

 

 

OG or Original:

Classic Biltong comes wet or dry, this product is definitely wet - in other words, it is ready to eat as a gourmet delicacy. Simply rinse, slice, and serve.

Not your average jerky snack, this is appropriate for fine charcuterie platters and accompanying really nice wines and cocktails.

Or, like some of our regulars, you can go "caveman" style on it and bite right in!

There is no wrong way of enjoying our hand selected Wisconsin Beef, that is then dipped in an Aged Balsamic (normal biltong just uses a cheap red wine vinegar, or even a Worcestire sauce!) After the quick bath, our beef is hand dredged through spices that happened to have been hand toasted in-house. Then air dried, and shipped to you.

Sold in 4 OZ bags that are normally packed way over (this is an artisanal operation!)

Keeps in the cheese drawer of the fridge for roughly a week or two.

Contains: Beef, balsamic vinegar, salt, black pepper, coriander, garlic, onion, Black Truffles flown in from Italy (please note, the red pepper and cayenne in the original recipe is deleted in this truffled batch!)
